The Professional Cookery (Adults) program at Bradford College aims to equip students with industry-standard cookery skills to become professional chefs. The program is a partnership with MyLahore Academy, offering students work placement opportunities in their kitchens. The course covers a wide range of cookery skills, from basic techniques like roasting and frying to more advanced aspects like menu design and maintaining a safe and hygienic work environment. The qualification gained is a City and Guilds of London Institute NVQ Diploma in Professional Cookery (Preparation and Cooking) at Level 2.


Outline:

The course content includes:

  • Maintaining a safe, hygienic, and secure working environment.
  • Maintaining, handling, and cleaning knives.
  • Working effectively as part of a hospitality team.
  • Maintaining food safety when storing, preparing, and cooking food.
  • Preparing fish, meat, poultry, and vegetables for basic dishes.
  • Cooking and finishing basic fish, poultry, vegetable, soup, pasta, dough, and meat dishes.
  • Preparing, cooking, and finishing basic bread and dough products.
  • The course duration is one academic year, starting in September 2025, and is delivered part-time.

Assessment:

Assessment methods include observation, questioning, and written tests on knowledge. The assessment is designed to evaluate the candidate's ability to apply their knowledge, understanding, and skills to practical tasks and challenges.
