- 5% Managerial Core: This initial module covers fundamental business concepts including Managerial Economics, Management Accounting for Decision Making, Business Strategy, Financial Statement Analysis, Project & Operations Management, Marketing (Traditional and Digital), Human Resource Management, and Data Analytics for Managers.
- 35% Focusing and Specialization: This section delves deeper into specific areas:
- Global Food, Wine, and Beverage Industry: Covers an overview of the global industry, consumer behavior in food economics, strategic behavior in food economics, entrepreneurship in food management (case studies), health and safety in food and beverage operations, leveraging "Made in Italy" excellence, and service standards and luxury guest experience management.
- Food Management: Focuses on strategies and positioning for luxury start-up restaurant formats, designing innovative and luxury food offerings, implementing menu engineering techniques, restaurant and kitchen layouts, culinary management, food risk management, supplier selection for food procurement and cost control, and food cost analysis with practical exercises.
- Wine & Beverage Management: Covers crafting a captivating wine and beverage offering, wine list engineering, supplier selection and beverage cost control techniques, wine appreciation and tasting techniques, and premium spirits selection.
- Deluxe Brands, Marketing, and Communication of Food, Wine, and Beverage: Covers deluxe brand management, utilizing audio-visual communication to promote luxury brands, effective mass media strategies, storytelling and public relations, and trade marketing and new sales channels.
- 10% Socially Responsible Mindset and Environmental Sustainability: This module covers Software Technologies in F&B (introduction to technology, digital tools for customer acquisition, data analysis for decision-making, performance measurement, revenue management, customer experience, and personalization) and Future Trends and Innovations in F&B (advancements in food and wine processing technologies, new technologies in the production chain, innovations in the allergen-free food sector, ghost restaurants and dark kitchens, food in fashion retail, and building ethical and responsible organizations).
- 10% Electives: Students can choose electives from seven main areas of interest: Innovation & Growth, AI4 Business, Tech & Digitalization, Industry Business Excellence, International Business, Global Electives with RBS international partner Business Schools, and Introduction to preparation for professional certifications.
- 15% Business in Action: This includes the Business Practice Lab (hands-on experience with Chianti wine sensory techniques and deluxe wine photography) and the Global Trends Lab (two virtual sessions on identifying and understanding the impact of global trends on businesses).
- 5% Capstone Project: Students tackle a real-world business challenge, potentially working in groups to develop a sales plan or loyalty program. Examples include developing a new sales and marketing strategy for a winery.
